Barley Crêpes with Cabbage and Sauce Pierre
Assemble the crêpes :
Fermented cabbage can now become a delicious and easy addition to your crêpes. Simply place about 1/3 cup on the bottom half of one crêpe, and fold over to create a half-moon. Then, place the crêpe in a shallow bowl with the folded edge in the middle of the bowl. Pour about 1/3 cup of sauce Pierre into the bowl along the folded edge of the crêpe, filling the empty side of the bowl. Repeat this procedure with the remaining crêpes, fermented cabbage, and sauce Pierre.
