Barley Crêpes with Cabbage and Sauce Pierre
Heat a skillet over medium; brush it with clarified butter to coat the bottom. Add 3 tablespoons of batter, and swirl it around to evenly distribute it.
Cook the crêpes until the bottom is golden brown and set, about 45 seconds to 1 minute. Flip and cook for about 15 seconds. Remove the crêpes and repeat with the remaining batter to make a total of 8 crêpes.
