Barley Crêpes with Cabbage and Sauce Pierre
Chop up some charred cabbage and place it in a large bowl. Save the rest of the cabbage for later. Add shio koji, lemon zest, lemon juice, kurozu vinegar, dill, and fish sauce to the chopped cabbage and stir to combine.
